Dr. Romi Burks started using chocolate to teach about the connections between disciplines around 15 years ago. As a Biology Professor at a small liberal arts college (Southwestern University), Burks teaches a multi-disciplinary First Year Seminar examining the subtleties of the "dark side" of chocolate and a deeper dive into the Science of Chocolate. She frequently judges in chocolate competitions, gives public lectures and encourages people to think more about what chocolate means.
